I know crocodilians mostly stop eating insects once they reach a certain size, but theoretically, could an adult crocodilian live a healthy live if it were fed an almost exclusively insect based diet by humans?

It depends on the crocodile.
Small ones like the curvier dwarf caiman or something similar couldn't even survive off of insects due to the fact that it would have to eat constantly.
Larger crocs, of course, couldn't.

Well, humans would be able to give them as many insects at once as they want.
As for the thread question, if we assume that they stop eating insects because they start costing more than they give, then yes if it are many dead insects at once offered by humans.

Ya, didn't even notice them 'fed by humans' part.

I'd love to see a crocodilian eat mosquito burgers.

Yes, but what do they taste like? I’ve never eaten a large enough quantity of them to know…

I had the perfect chance when several decided my mouth would make a good home.......never sleep with your mouth open outside......especially in Florida.

it would have to be a really, really, really small (hypothetical)species of crocodilian -- like the size of an anole or something, but its plausible i guess. not even the smallest extant species can live healthily off of insects their entire lives because they're simply not as rewarding as small mammals and the like.
